NCMS Business Spotlight: ÉTABLI

This month’s NorthCap Business Highlight is établi, located at 84 T Street NW. Owners Thomas Bosivert and Kathleen Davis opened the restaurant in Bloomingdale this past May. They believe that wine is the perfect accompaniment to good people and good food and best served in a casual and inviting atmosphere. Read on to learn more about the newest restaurant in the NorthCap business corridor:

Tell us a little about yourself and your life.

établi is our second restaurant creation. We started our restaurant career on H St NE in 2014. Prior to that, I [Thomas] was an attorney and Kathleen was a meeting planner. We also co-parent a very handsome shiba inu named Kitsune who you may occasionally see hanging out on the patio.

What makes établi unique?

You would be hard-pressed like grapes to find a more casual spot to enjoy a glass of quality vino. We have an amazing monthly wine club and a curated retail wine program called Carpe Vinum. Also, our bar manager claims to make the best daiquiri in Bloomingdale (speculative but unverified).

What do you love about the neighborhood?

We love that Bloomingdale is simultaneously a cozy neighborhood and a commercial hub with a vibrant bar and restaurant scene. Every bar and restaurant in the neighborhood has its own distinctive flavor that contributes to a diverse tapestry. We’ve also been delighted to have so many of our new neighborhood friends become regular faces at établi. It’s very enriching getting to know our customers on a personal level and sharing a glass of wine with them.

How can the community support you right now?

We really appreciate all of our new neighbors who have already stopped by to check us out! If you haven’t yet, please drop in and enjoy a flight of wine (or even a cocktail) at our bar where we have happy hour every day from 5 to 7 pm.
